Halloween Peanut Butter Candy

This recipe is inspired by everyone's favorite Reese's Peanut Butter Ghost candy! These are homemade and can by decorated how you like! They are easy to make and would be great for kids.

Ingredients

Peanut Butter Candy Filling

  • 1 1/4 cup natural, runny peanut butter (no sugar added)
  • 1/4 cup maple syrup (pure)
  • 1/4 cup powdered sugar
  • 1/3 cup almond flour
  • 1/2 teaspoon vanilla extract
  • pinch of salt

White Chocolate Coating

  • 8 ounces white chocolate melting wafers (we used Ghirardelli brand)
  • 2 teaspoons coconut oil

Instructions

  • In a mixing bowl, mix together the peanut butter, maple syrup, powdered sugar, almond flour, vanilla extract, and salt.
  • Roll about 2-tablespoons of the peanut butter mixture into the shape of your choosing.
  • Place on a parchment paper-lined baking sheet and freeze while you prepare the coating.
  • Add the white chocolate and coconut oil to a microwave-safe bowl. Microwave in 15-20 second intervals, stirring well between each interval, until fully melted.
  • Coat each piece of candy. It is easiest to coat when they are semi-frozen. This helps the coating harden faster. Return the coated candy to the parchment paper.
  • Decorate the candies! Enjoy!

Notes

Food dye: I used the all natural food dye to make the "veins" in the eyeball. As you can see it is a raspberry kind of color rather than dark red.
